brussel-sprouts Roasted Brussels Sprouts with Cranberries and Pecans

(Serves 4)

Ingredients:
2 bags brussels sprouts (1lb fresh)
2 tablespoon olive oil
Himalaya sea salt and pepper (to taste)
1/3 cup cranberries (fresh, whole)
2 ounces pecan halves
1 tablespoon maple syrup
1 tablespoon balsamic vinegar
1/4 teaspoons vanilla extract

Directions

  • Preheat oven to 400°F. Line a roasting pan with parchment paper.
  • Toast pecan halves in a dry skillet over medium heat until lightly golden and fragrant.
  • Cut Brussels in half (if not already chopped) and toss in olive oil, salt, and pepper. Cook in ov-en for 20 minutes.
  • While Brussels are cooking, whisk the maple syrup, balsamic vinegar, and vanilla in a small bowl.
  • After 20 minutes (or until Brussels are golden), remove, add cranberries and drizzle with sauce.
  • Return the pan to the oven and continue to roast for 5 to 8 minutes.
  • Remove the roasted Brussels sprouts and cranberries with a spatula, and transfer them to a bowl. Add the toasted pecans.

pumpkin-spice-latte Pumpkin Spice Latte
(Serves 4)
Ingredients:
4 cups brewed coffee
1 cup canned pumpkin
4 cups milk or milk alternative of choice (recommended: coconut, almond, or cashew milk)
1/3 cup maple syrup
1 teaspoon cinnamon
1/4 teaspoons nutmeg
1 tablespoon vanilla

Directions

  • Combine the pumpkin, milk, maple syrup, cinnamon, nutmeg and vanilla in a medium size saucepan. Cook on low to medium heat until mixture is hot but not boiling, whisking as it cooks.
  • Place the hot mixture into a food processor with coffee to smooth the latte (you can also use an immersion blender).
  • Serve in mugs topped with coconut whipped cream (if desired) and sprinkled with cinnamon.
